Explain how grind size, contact time, water heat, and ratio affect bitterness.
Most bitter cups share a small set of causes
Coffee brewing is extraction: water pulls flavor from ground coffee. Push too far and the cup can become dry, bitter, hollow, or harsh.
You do not need a full science lesson to fix the next cup. Start with four practical levers.
The four levers
- Grind size: finer coffee extracts faster; coarser coffee extracts slower.
- Contact time: longer brewing keeps water and coffee together longer.
- Water heat: hotter water extracts faster, especially with dark roasts or fine grinds.
- Ratio: the amount of coffee compared with water changes body, concentration, and how hard the brew is pushed.
The beginner pattern
If a cup is bitter, dry, slow, muddy, or rough, the brew may be pushed too hard somewhere. Your first test should usually make extraction gentler or the recipe steadier.
That might mean grinding a little coarser, shortening contact time, letting boiling water rest briefly, or stabilizing the coffee-to-water amount.
Do not change all four. Choose the strongest clue and test one.
